The original label reads: "Knossos '60 sunset on sorting tables at Taverna." "Sorting tables" refers to the practice of spreading potsherds out on tables so that it is all visible, then sorting it into categories according to date, style, vessel type, provenance, etc. It is common practice for all archaeological excavations.
